Ikura, or salmon roe, is gently laid on a bed of warm sushi rice wrapped in seaweed. Fresh pieces of Akami, or lean piece of tuna, are rubbed with soy sauce atop perfectly seasoned sushi rice,and topped with garnishes.
Salmon, Albacore, and Botan Shrimp
Melt-in-your-mouth piece of Salmon is topped with spicy yuzu sauce, while the seared Albacore is flavored with ponzu sauce and scallion. The raw Botan Shrimp is a nice change from the typical cooked Ebi nigiri.
Toro, Uni, and Scallop
One of the most coveted pieces of sushi, Toro - or fatty tuna - is torched and has a buttery texture. A generous amount of Uni sits atop a bed of sushi rice. The raw Scallop is sprinkled with black truffle salt.
Wagyuni, Unagi, and Yellowtail
The Wagyuni features the best of surf and turf with seared wagyu and buttery uni. Finally, the flavorful Unagi is seasoned with slightly sweet glaze and wrapped in seaweed. The yellowtail melts in your mouth and pairs perfectly with well-seasoned sushi rice.

The 2018 C-CAP Annual Benefit, which raises funds to support this national non-profit that provides underserved high school students with education and career opportunities through the culinary arts, took place on Tuesday, Feb. 27, at the Pier Sixty in Chelsea Piers. Open Market 2018, the annual 'indoor block party' hosted by the Meatpacking District Business Improvement District (BID), returns to Highline Stages next Thursday, March 8, to celebrate the local business community. Dubbed the unofficial kickoff to the spring season, visitors and locals alike can enjoy every aspect of the iconic neighborhood, all under one roof.
