Master Neapolitan pizza maker Gina Sorbillo opened the eponymous pizzeria on the Bowery in NoHo, where diners can indulge in authentic Naples-inspired pizzas and other delicious Italian dishes.

Its selection of delicious pizzas is the absolute standout at Sorbillo. The pizza dough, made with organic flour and kneaded by hand, is rich in fiber, bran, mineral, salts, and vitamins. The dough is fermented using natural yeast, which makes it fluffy, light, and easily digestible. All pizzas are baked in an wood-fire ovens to create perfectly crusty exterior and fluffy, chewy interior. The toppings range from San Marzano tomatoes to Italian organic extra virgin olive oil to to mozzarella bufala, just to name a few.

Another strong contender is the pasta menu, including the classic Spaghetti Aglio E Olio with peperoncini, or crushed chili pepper, with garlic. The spaghetti is prepared perfectly al dente and the rich flavor of organic EVOO permeates in every bite.
