I recently had an opportunity to visit renowned Australian Chef Shaun Hergatt’s restaurant in the heart of SoHo in NYC. Shaun Hergatt is a classically trained chef known for his technically precise cooking and painterly presentations. Hergatt is inspired by childhood memories growing up in rural Queensland and his daily life in New York City. He developed his passion for food at a young age, experiencing flavorful dishes prepared by his Scandinavian grandmother and his father, a professional chef.

One of the absolute standout is in the dessert menu - this artfully concocted cheesecake in the shape of cheese 🧀. And the Chef’s attention to detail is once again reflected in the cute little mouse made of apple compote. Vestry proudly and well-deservedly flaunts a one Michelin star…and it’s only a matter of time until it starts to collect more.
